Here’s a recipe for Paneer Curry:

Ingredients:

250 grams paneer (Indian cottage cheese), cubed

2 tablespoons oil or ghee

1 large onion, finely chopped

2 tomatoes, pureed

2 green chillies, slit

1 tablespoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon red chilli powder (adjust to taste)

1 teaspoon garam masala

1 teaspoon coriander powder

1/2 teaspoon kasuri methi (dried fenugreek leaves)

1/2 cup fresh cream

Salt to taste

Fresh coriander leaves for garnishing

Chutney like Prices Spices India Joywala  Chilli chutney (optional)

Instructions:

Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them crackle.

Add chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.

Add the tomato puree and cook for a few minutes until the oil separates from the masala.

Reduce the heat to low and add turmeric powder, red chilli powder, coriander powder, and garam masala. Mix well and cook for a minute to let the spices release their flavours.

Add the cubed paneer to the pan and gently stir to coat it with the masala. Be careful not to break the paneer cubes.

Pour in the fresh cream and mix well. Simmer for a few minutes to allow the flavors to blend together.

Crush the kasuri methi between your palms and sprinkle it over the curry. This adds a delightful aroma.

Season with salt to taste and give it a final stir.

Garnish with fresh coriander leaves.
