Combined with the robust flavours of Adore Chillies lemon  Piri Piri sauce, it creates a marinade that beautifully enhances the natural juiciness of the chicken, while infusing it with a delightful spiciness.

Ingredients:

  • 4 chicken leg quarters (or chicken pieces of your choice)
  • 1/4 cup Adore Lemon Piri Piri sauce
  • 2 tablespoons olive oil
  • 1 teaspoon chilli flakes (adjust according to your desired level of spiciness)

Instructions:

  1. In a bowl, combine Adore Piri Pir sauce, olive oil, and chilli flakes. Mix well to create the marinade.
  2. Place the chicken pieces in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is coated evenly. Seal the bag or cover the dish with plastic wrap. Marinate the chicken in the refrigerator for at least 2 hours, or preferably overnight for the best flavour.
  3. Preheat your BBQ grill to medium-high heat.
  4. Remove the chicken from the marinade, allowing any excess marinade to drip off. Reserve the remaining marinade for basting.
  5. Place the chicken on the grill, skin-side down. Cook for about 6-8 minutes per side, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
  6. While grilling, baste the chicken with the reserved marinade, turning occasionally to ensure even cooking and to build up a flavorful glaze.
  7. As you baste the chicken, keep an eye on the grill to avoid excessive charring. Adjust the heat as needed to maintain a moderate temperature.
  8. Once the chicken is cooked and has a nice charred appearance, remove it from the grill and let it rest for a few minutes to allow the juices to redistribute.
  9. Serve the BBQ Piri Piri Chicken hot, and garnish with fresh cilantro or parsley, if desired. This dish pairs well with grilled vegetables, corn on the cob, or a refreshing summer salad.
