4 chicken breasts
2 tablespoons vegetable oil
2 tablespoons lime juice
2 cloves garlic, minced.
1 teaspoon salt
1/2 teaspoon black pepper
Fresh coriander for garnish (optional)
In a bowl, combine Adore Chillies Mango and Scotch Bonnet Chilli Sauce, oil, lime juice, minced garlic,, salt, and black pepper. Mix well to create the marinade.
Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each breast is coated evenly. Seal the bag or cover the dish with plastic wrap. Marinate the chicken in the refrigerator for at least 2 hours, or preferably overnight for the best flavour.
Preheat your grill to medium-high heat or preheat your oven to 425°F (220°C) for baking.
If grilling: Remove the chicken from the marinade and shake off any excess. Grill the chicken on medium-high heat, turning occasionally, until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. This will take about 15-20 minutes, depending on the thickness of the chicken breasts. Baste the chicken with any remaining marinade during grilling.
If baking: Place the chicken on a baking sheet lined with foil or in a baking dish. Bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C). Baste the chicken with the marinade once or twice during baking.
Once the chicken is cooked, remove it from the grill or oven and let it rest for a few minutes. This allows the juices to redistribute and the chicken to become tender.
Serve the Caribbean Chicken hot, garnished with fresh coriander, if desired. This flavourful dish pairs well with rice and beans, plantains, or a tropical salad.
