Belgian triple cooked Chips

Nothing beats freshly made chips triple cooked like they do them in Belgium. To make triple cooked fries you need to peel some potatoes, cut them into chip size wedges then blanch them in hot water for a couple of minutes. After that dry the Chips with a paper towel. Now place a handful or two of the wedges in a frying basket. Do not try to fry more than this at a time as otherwise the chips will become soggy

Next, bring some vegetable oil to a medium heat in pot . Lower the chips into the oil and fry for a couple of minutes until the chips are starting the change colour. Remove from the oil and place the chips on absorbent paper kitchen towels. Allow any excess oil to drain from the chips. Continue frying all the chips in batches and drain them in the way described until all the chips have been cooked. Finally , cook the the chips again in small batches in the heated oil until they become golden brown. Drain any excess oil and serve immediately
