Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Trim the leaves and stem of each cauliflower head, leaving the core intact.
Cut each cauliflower head into 4 thick "steaks" by slicing vertically from top to bottom. You should have 8 cauliflower steaks in total.
Season both sides of the cauliflower steaks with salt and pepper.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
Sear the Cauliflower Steaks:
Once the oil is hot, carefully place the cauliflower steaks in the skillet.
Sear for about 2-3 minutes on each side or until they develop a golden-brown crust. This step adds flavour and texture to the steaks.
Once the cauliflower steaks are seared, brush a generous amount of the Chipotle Chili Sauce onto one side of each cauliflower steak, coating them evenly.
Transfer the cauliflower steaks to the prepared baking sheet with the Chipotle sauce side up.
Bake the cauliflower steaks in the preheated oven for 10-15 minutes or until they are tender and the sauce has caramelized slightly.
Remove the cauliflower steaks from the oven and garnish with fresh cilantro or parsley if desired. Serve hot with lime wedges on the side for an extra burst of flavour.
